Ingredients
  

  • 6 cups fresh broccoli florets about 2 medium heads
  • ½ cup shredded carrots
  • ¼ cup diced red onion
  • 2 large apples finely chopped
  • 1/3 cup sliced dry roasted almonds or sunflower seeds or nuts of choice
  • 1/3 cup dried cranberries optional
  • DRESSING:
  • 1 5-6 oz container plain Greek yogurt (3/4 cup)
  • 1/4 cup clean ingredient mayo or additional Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1/2-1 tbsp honey or sweetener of choice to taste
  • 1/4 tsp salt to taste
  • 1/8 tsp pepper to taste

Instructions
 

  • In a large bowl combine broccoli, carrots, red onion, apples, almonds, and dried cranberries.
  • To make the dressing: Whisk together Greek yogurt, mayo, apple cider vinegar, honey, salt and pepper.
